I have been struggling with writing this page for some time now.  I was just doing some site maintenance today and saw the pitiful description I put up last year thinking that I would go back soon and type something better.  A year later . . . I guess it’s time.

My name is Kristan Jones.  If you met me when I lived in my hometown of La Porte City, Iowa, then you know me as Kristan Bathen.  If you were introduced to me by a member of my Iowa family, you may know me as Krissy (a name I hate and only a few people can get away with using.)  If you met me before I met my husband, then you know me as K.B.  If we met while I was in Africa, then you probably called me Kristina.  If you were introduced to me by a friend after I met my husband, you may know me as J.K.B. (a combination of our two “names”, J.K. & K.B.)  If you currently live in my house, you probably call me Mommy.

I was raised on a farm in rural Iowa.  My Daddy was a farmer and worked for 30 years for John Deere.  My Mom stayed home and raised my brothers and sister and me.  I went to school, marched in the band, sang in the choir, acted on stage, competed in speech . . . (more to come later, I hear a kiddo calling me . . .)

      2 large ripe tomatoes, finely chopped
      1 medium white onion, finely chopped
      2 large garlic cloves, minced
      2 cucumbers, peeled, seeded, finely diced
      5 radishes, finely diced
      3 fresh serrano chiles, seeded, very finely chopped
      1 TBSP white wine vinegar
      1 TBSP fresh lime juice
      salt to taste

      In a medium bowl, mix lime juice and vinegar together. Add tomatoes, onion, garlic, cucumbers, radishes, and chiles. Add salt to taste. Best if refrigerated, covered for at least 1 hour and served the same day made. Makes about 3 cups. (I couldn’t find radishes at Publix this week so I used a small amount of red onion. It is better with the radishes. Enjoy!!!)
